  1. Season the beef with a teaspoon of salt and a half teaspoon of pepper.

  2. In a large skillet heat a drizzle of oil over medium heat. Add the meat, and cook by stirring until all the liquid evaporates and the meat browns a little, cutting any large lump with the spoon.

  3. Once the meat has browned, add the garlic and onion. Cook, stirring until the onion begins to turn translucent.

  4. Add the tomato and stir. Lower the heat and cover until the tomatoes are soft and the meat is juicy but without excess liquid (about 15 minutes).

  5. Taste and season with salt and pepper if necessary. Reserve

  6. While the meat is cooking, peel the eggplant and cut into thin slices (6 mm [¼ “]). Paint with a little oil each slice.

  7. Heat a large skillet over medium-high heat. Place the aubergines in the pan (do not stack), cook until golden brown and turn to brown the other side. Repeat with all the slices and reserve.

  8. Mix the cottage cheese and half of the mozzarella. Season with a teaspoon of salt.

  9. Pour a splash of the oil in a glass or ceramic lasagne pan (23 x 18 x 2 cm [9 “x 7” x 2 “]) and spread the entire background.

  10. Place half of the eggplant slices in the mold forming an even layer.

  11. Pour the mixture of cottage cheese and mozzarella and form an even layer, followed by the beef, pressing to make it even.

  13. Bake at 165 ° C (375 ° F) for 20 minutes, or until the mozzarella is melted and a little browned.
