Vegetable sandwich–I begin of recommendations with a quick dinner for beginners: a sandwich – which you already know has healthier versions. On this occasion, I propose an option with vegetables as a base that also plays with the color of its ingredients.

- Light mayonnaise
To start, we prepare the sauce by beating basil leaves, chives, garlic, salt, the juice of half a lemon and a little mayonnaise.
A good option to give more texture to our sandwich is to toast the bread, which I recommend is spelled or cereal. While it is roasted, we peel and slice the avocados and the green tomato.
Next, we spread the sauce on toasted bread and place the tomatoes, cucumber, lettuce, and avocado with thin slices of mozzarella among the ingredients.
